Bush donuts and bush nachos

Ok so I am all for bush cooking but it needs to be easy and made with mostly non perishable food for those long camping trips. I am also normally exhausted after a full day of prospecting so right now these are my two favourite recipes that are super easy! Enjoy!

Bush donuts -

Those Essential Kitchen Camping Tools -

Heat source
Frypan
Bowl for pancake mix
Dessert bowl for sugar
Tongs

Ingredients -

  • Sliced white bread - remove the crusts

  • Jam

  • Pancake mix (packet mix is handy)

  • Cooking oil

  • Castor sugar (or icing sugar also works)

Instructions -

  • Mix up the pancake batter

  • Put castor sugar into another bowl, we add cinnamon

  • Spread a decent amount of jam on one side of a piece of bread. No butter or margarine required.

  • Fold bread in half so jam side is in the middle, and press the edges of the bread together. Make sure it is all sealed

  • Drop into pancake mix and make sure you get a good coating

  • One by one drop into frying pan and shallow fry until golden brown

  • When brown take out and roll into the sugar mix

SO GOOD!

Campfire Nachos!

Ok ill admit this is not my photo and mine do not look this pretty when I make them but I promise they are easy and delicious! As you guys know its important to have non perishable foods when camping, we go on prospecting trips for over 10 days and by the last 4 days the fresh food is gone.

The best thing about this recipe is you can make it as simple as you like for the days when the veggies and fish food is gone or you can pimp in up when you have an esky full of things to add.

This is a vego option but you could definitely add some meat if you like :)

Equipment needed -

  • While a cast-iron Dutch oven is our preferred vessel for making these nachos, it would also be possible to make a smaller portion in a cast-iron skillet with a lid. The key is having some sort of lid to trap the steam inside to help melt the cheese and slightly soften the chips.

  • Don’t have a lid for your Dutch oven or cast-iron skillet? A sheet of aluminum foil over the top should do the trick, or you could cover it with a large plate.

  • Lining the bottom of your Dutch oven with parchment paper or foil will make clean-up a snap!

Ingredients -

Like I said you can keep it super easy or you can pimp it out. When I am on the last legs of the trip I just add beans, canned tomatoes, jar salsa, cheese and its so good!

- Nacho chips (will last the whole trip if unopened)
- A can of mixed beans, refined beans or black beans. If I have time I will cook these in some BBQ sauce, onion and c=garlic before adding them to this chips but if not I will just ad them on as is. Either way season well!
- A jar of salsa
- If you're feeling fancy you can make up some fresh salsa which is always good
- Cheese
- Sour cream (optional)
- Any fresh toppings you want to add after, Jalapeños, spring onion, tomatoes, red onion, coriander, fresh salsa, guac etc...

Method-

- We have a big dutch oven that we put on coals, I then line this with baking paper.
- Add the chips
- Add a layer of beans
- Add your salsa
- Add a f**k tonne of cheese
- Pop the lid on and cook until the beans are cooked and all the cheese is melted!
- Pop up on your fresh ingredients and sour cream and there you have the easiest dinner going!
